We will deliver dinner for 2, paired with 2 Piedmontese gems: a bottle of

2017 Nebbiolo or 2018 Chardonnay and a bottle of 2015 Barolo Serralunga

Sergio will introduce you to his wines, and Sal will present his food with wine pairings.

The grapes are harvested by hands.
After the de-stemming and crush the must undergoes alcoholic fermentation for 4 to 5 days in contact with the skins. Following fermentation wine will undergo the malo -lactic fermentation and will continue to rest in the steel tanks for another 6 months before bottling.
The short maceration give freshness

The grapes that are produced for this wine are situated in Serralunga, the heart of the Barolo area.  The alcoholic fermentation happens in vertical stainless steel tanks with a maceration on the skins for about 20-30 days.
After racking and malo-lactic fermentation, the wine is then placed into different sized barrels for a period of 18 to 24 months.
After this aging the wines will then be ready to be bottled and will rest in bottle for another 6 months before being available to the market.
